Makes 16 servings

5 lbs onions, unpeeled

Preparation
1. Peel onions and slice 1/8 inch thick, ideally in a meals processor.
2. Soften butter in a 6-quart (or bigger) stockpot. Add onions; prepare dinner, uncovered, over low warmth for 1 1/2 hours, stirring sometimes.
